  • 6 cups finely diced peeled Apples (4 med-large Honey Crisp apples yielded 6 cups)
  • 1/2 cup water*
  • 1/2 tsp. butter
  • 1 package Sure-Jell (powdered fruit pectin)
  • 4 cups sugar
  • 1 cup packed brown sugar
  • 1/2 tsp. ground cinnamon (heaping)
  • 1/4 tsp. ground nutmeg

Instructions

  1. Prepare the Apples: In a large stockpot, combine the apples, water, and butter. Cook and stir over low heat until apples are tender, which takes about 10 minutes.
  2. Incorporate the Pectin: Stir in the pectin and bring the mixture to a rolling boil while stirring constantly. This ensures the pectin is fully dissolved and activated, which is essential for the jam to set properly.
  3. Add Sugars and Spices: Add the sugars, cinnamon, and nutmeg to the pot. Return the mixture to a rolling boil and maintain it for 1 minute, stirring constantly. The combination of brown sugar and white sugar gives the jam its signature caramel flavor.
  4. Process the Jam: Remove the pot from the heat and skim off any foam that may have formed. Carefully ladle the hot mixture into hot, sterilized half-pint or pint jars, leaving 1/4-inch headspace at the top. Remove any air bubbles by gently tapping the jars on the counter or using a non-metallic spatula. Wipe the rims clean and adjust the lids.
  5. Seal and Cool: Process the jars in a boiling water bath for 10 minutes to ensure they are properly sealed and safe for storage. After removing the jars from the water bath, gently twist them from side to side while cooling to evenly distribute the apple pieces throughout the jam.
