Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1 cup ricotta cheese
  • 1/2 cup mini chocolate chips
  • 1/4 cup chopped pistachios
  • Powdered sugar for dusting

Instructions

  1. Preheat the Oven and Prepare Baking Sheets
Preheat your oven to 375°F (190°C) and line your baking sheets with parchment paper to prevent sticking.
  2. Combine Dry Ingredients
In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream Butter and Sugar
In another bowl, cream together the softened butter and granulated sugar until the mixture becomes light and fluffy.
  4. Add Eggs and Vanilla
Beat in the eggs, one at a time, followed by the vanilla extract. Stir in the ricotta cheese until well combined.
  5. Mix Dry and Wet Ingredients
Gradually add the dry ingredients to the wet mixture, stirring just until everything is combined. Be careful not to overmix.
  6. Fold in Chocolate Chips and Pistachios
Gently fold in the mini chocolate chips and chopped pistachios, ensuring an even distribution throughout the dough.
  7. Form and Bake the Cookies
Using a spoon, drop spoonfuls of dough onto the prepared baking sheets. Bake for 12-15 minutes or until the cookies are lightly golden on the edges.
  8. Cool and Dust with Powdered Sugar
Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely. Once cooled, dust the cookies with powdered sugar to finish.
