 Broccoli Cheese Stuffed Chicken

Ingredients

4 large boneless skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika
1 cup finely chopped cooked broccoli
1 cup shredded cheddar cheese
1/4 cup cream cheese, softened
1 tablespoon mayonnaise
1 tablespoon olive oil


Instructions

  • Preheat oven to 375°F (190°C).

  • Butterfly each chicken breast by slicing horizontally to create a pocket, without cutting all the way through.

  • Season the outside of each chicken breast with salt, pepper, garlic powder, and paprika.

  • In a bowl, combine chopped cooked broccoli, shredded cheddar cheese, cream cheese, and mayonnaise.

  • Fill each chicken pocket with the broccoli cheese mixture.

  • Use toothpicks to secure the opening if needed.

  • Heat olive oil in a large oven-safe skillet over medium heat.

  • Sear each stuffed chicken breast for 3–4 minutes per side until golden brown.

  • Transfer skillet to the oven and bake for 20–25 minutes, or until chicken reaches an internal temperature of 165°F (74°C).

  • Let rest for 5 minutes before serving.

Notes

  • Serve the broccoli cheese stuffed chicken hot alongside roasted vegetables, mashed potatoes, rice, or a fresh green salad.

  • For a low-carb meal, pair it with cauliflower rice, sautéed spinach, or zucchini noodles.

  • To store leftovers, place the cooked chicken in an airtight container and refrigerate for up to 3 days.

  • Reheat in the microwave for 1–2 minutes or in a 350°F (175°C) oven for 10–15 minutes, until heated through.

 

  • Avoid freezing the stuffed chicken, as the cheese and broccoli mixture may separate and affect the texture.
