Ingredients

  • 8 slices thick-cut bacon
  • 1 pound ground pork sausage
  • 4 slices mild cheddar cheese
  • 1 tablespoon unsalted butter
  • 8 large eggs (beaten)
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 12 slices white bread (toasted)
  • 1 large avocado (pitted, peeled, sliced)
  • ¾ cup cowboy butter (softened, divided)

Instructions

1. Cook the Bacon
Preheat the oven to 425°F (218°C) and line a baking sheet with aluminum foil. Arrange the bacon slices in a single layer and bake for 25-30 minutes, or until crispy. Drain excess grease by placing the bacon on a plate lined with paper towels.

2. Prepare the Sausage Patties
Divide the ground sausage into four equal portions and shape them into patties slightly larger than your slices of bread. Heat a skillet over medium heat and cook the patties for 3-4 minutes per side until browned and fully cooked (internal temperature should reach 160°F). During the last minute, top each patty with a slice of cheddar cheese to melt.

3. Make Scrambled Eggs
Using the same skillet, melt the butter over medium heat. Add beaten eggs, salt, and pepper, stirring gently to form soft curds. Cook until the eggs are thickened and no liquid remains, then set aside.

4. Assemble the Sandwiches
Spread 1 tablespoon of cowboy butter on one side of each slice of toasted bread. For each sandwich:

  • Place a sausage patty on one slice of toast (buttered side up).
  • Add a second slice of buttered toast.
  • Layer two slices of crispy bacon, avocado slices, and about ½ cup of scrambled eggs.
  • Top with a third slice of buttered toast.

5. Serve and Enjoy
Cut each sandwich into four triangles and secure with toothpicks for easy handling. Repeat the process for the remaining ingredients and serve immediately.
