  • 1 cup fresh blueberries
  • 2 tablespoons granulated sugar
  • 1 cup salted butter, softened

  • 5 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

Blueberry Reduction:

  1. Begin by making the blueberry reduction. In a 2-quart saucepan, combine the fresh blueberries and granulated sugar over medium heat.
  2. Use a potato masher to break down the blueberries, allowing them to cook for 8 to 10 minutes until they have reduced to a thick, jam-like paste.
  3. Remove the cooked fruit from the heat and let it cool to room temperature. Transfer the mixture to a bowl and refrigerate for faster cooling.

Frosting:

  1. In a large mixing bowl, beat together the softened cream cheese and butter until light and fluffy.
  2. Add the vanilla extract to the cream cheese and butter mixture, and beat until well combined.
  3. Gradually beat in the powdered sugar, one cup at a time, until the frosting is thick and fluffy.
