  • Author: Lusine Svetlana

Description

Chicken salad is a timeless classic that perfectly balances flavors, textures, and freshness. Whether you’re hosting a luncheon, preparing a quick family meal, or craving a satisfying dish, this recipe delivers. Packed with juicy chicken, fresh herbs, and a creamy dressing, it’s a dish that will have everyone coming back for seconds. Let’s dive into how to create this flavorful masterpiece.

Ingredients

  • 34 pounds of chicken parts (bone-in, skin-on thighs, and breasts work best)
  • 2 tablespoons of high-quality olive oil
  • 1 cup seedless grapes, halved (red and green varieties add a pop of color)
  • 1 cup finely chopped almonds (optional, for a delightful crunch)
  • 1 celery stalk, thinly sliced
  • 4 green onions, finely sliced (including white and green parts)
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 cup mayonnaise
  • Juice of 1 lemon
  • 1 tablespoon Dijon mustard
  • 1 teaspoon kosher salt
  • Ground black pepper to taste

Instructions

  • Prepare the Chicken: Preheat your oven to 350°F. Rub the chicken pieces with olive oil, then season generously with salt and pepper. Arrange them on a baking tray and bake for 35–45 minutes, or until cooked through. Let the chicken cool before removing the meat from the bones and chopping it roughly.
  • Combine the Ingredients: In a large mixing bowl, toss the chicken with grapes, almonds, celery, green onions, dill, and parsley. Mix gently to ensure even distribution.
  • Make the Dressing: In a separate bowl, whisk together mayonnaise, lemon juice, Dijon mustard, salt, and black pepper. Taste and adjust the seasoning if necessary.
  • Assemble the Salad: Pour the dressing over the chicken mixture and fold it in gently to coat all the ingredients. Cover the bowl and refrigerate the salad for at least one hour to let the flavors meld.
  • Serve and Enjoy: Serve the chicken salad on a bed of fresh greens, garnished with sliced tomatoes and avocado. Customize with your favorite toppings or enjoy it as-is!

Notes

Serving Suggestions

  • On a Bed of Greens: Serve the chicken salad on a bed of fresh lettuce or mixed greens for a light and refreshing meal. Add sliced cucumbers, cherry tomatoes, or avocado for extra flavor.
  • In a Sandwich or Wrap: Use the chicken salad as a filling for sandwiches or wraps. Pair it with whole-grain bread or a tortilla for a hearty and portable lunch option.
  • As a Party Appetizer: Scoop the salad into small lettuce cups or serve with crackers for a bite-sized appetizer that’s perfect for entertaining.
  • With Fruit or Vegetables: Pair the salad with a side of fresh fruit, such as watermelon or pineapple, or crunchy vegetables like carrot sticks and celery for a balanced meal.

Storage Tips

  • Refrigeration: Store the chicken salad in an airtight container in the refrigerator for up to 3–4 days. Make sure to keep it chilled at all times to maintain freshness and prevent spoilage.
  • Avoid Freezing: Chicken salad is best enjoyed fresh and does not freeze well due to the mayonnaise-based dressing, which can separate and change texture upon thawing.
  • Prepping Ahead: If you’re making this dish ahead of time, you can prepare the chicken and dressing separately. Combine them with the other ingredients just before serving for optimal freshness and flavor.
