Ingredients
- 1 ½ lbs beef tenderloin, sirloin tips, or petite shoulder cut into bite-size pieces
- Salt and freshly ground black pepper
- 1 tablespoon olive oil
- 3 tablespoons butter
- ½ lb sliced cremini mushrooms or white mushrooms
- ½ cup finely chopped onion
- 3 cloves garlic, minced
- ⅓ cup dry red wine (optional)
- 2 cups low sodium beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 3 tablespoons cornstarch
- ¼ cup cold water
Instructions
- Generously season the beef with salt and pepper. Heat olive oil in a Dutch oven or large skillet over medium heat. Brown the beef on all sides in batches, adding more oil if needed. Remove and set aside with pan juices.
- Melt butter in the same pot, add mushrooms, and cook until lightly browned. Stir in onions and cook until softened, then add garlic and cook for one more minute. Transfer to the plate with the beef.
- Deglaze the pot with red wine, scraping up brown bits, and simmer until reduced by half. Stir in beef broth, Worcestershire sauce, and soy sauce. Bring to a boil, then reduce heat to simmer.
- Mix cornstarch with cold water to form a slurry. Slowly whisk into the simmering liquid until slightly thickened.
- Return beef and mushroom mixture with juices to the pot and simmer gently for 10 minutes until the beef is tender and gravy has thickened. Adjust seasoning with salt and black pepper.
- Serve hot over mashed potatoes, noodles, or rice. Garnish with chopped parsley or thyme.
Notes
Beef Tips and Gravy is best served over creamy mashed potatoes, buttery egg noodles, or steamed white rice, which soak up the rich gravy beautifully. Pair it with roasted vegetables, sautéed green beans, or a fresh garden salad to complete the meal. For leftovers, store in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if needed to loosen the sauce. For longer storage, freeze in freezer-safe containers for up to 2 months. Thaw overnight in the fridge before reheating.
