Ingredients
2 lbs Ground Beef.
1 Small Onion, Diced.
1 Bell Pepper, Diced.
2 Garlic Cloves, Minced.
24 oz Beef Broth.
28 oz Diced or Crushed Tomatoes.
2 Taco Seasoning Packets.
4 oz Salsa.
4 oz Softened Cream Cheese.
1 Cup Heavy Cream.
2 Cups Cheddar Cheese.
Instructions
1. Sauté the Beef and Vegetables
In a large pot or your Instant Pot, sauté the ground beef, diced onion, and bell pepper over medium heat until the meat is fully cooked and the vegetables are tender.
2. Add Flavorful Ingredients
Stir in the minced garlic, beef broth, diced tomatoes, salsa, and taco seasoning. If using an Instant Pot, set it to High pressure and cook for 2 minutes. Once the cooking cycle is complete, allow the pressure to release naturally.
3. Incorporate Creamy Elements
Slowly add the softened cream cheese, heavy cream, and cheddar cheese to the pot. Stir until the cheeses are fully melted and the soup is well blended.
4. Serve and Enjoy
Ladle the soup into bowls and garnish with your favorite taco toppings, such as shredded lettuce, diced tomatoes, sour cream, or chopped cilantro.
Optional Crockpot Method
You can also make this Beef Taco Soup in a Crockpot. After browning the beef, add all the ingredients (except for the cream cheese, heavy cream, and cheddar cheese) to the Crockpot. Cook on low for 6-8 hours or on high for 3-4 hours. Stir in the cream cheese, heavy cream, and cheddar cheese before serving.
Notes
Serving Tips:
- Garnish for Flavor: Enhance the taste and presentation of your Beef Taco Soup by garnishing with your favorite taco toppings such as shredded lettuce, diced tomatoes, chopped cilantro, avocado slices, or a dollop of sour cream.
- Side Options: Serve the soup with warm tortilla chips, crusty bread, or cornbread to make it a complete meal.
- Adjust Consistency: If the soup is too thick after cooling, stir in a bit more beef broth or water to reach your desired consistency before serving.
Storage Tips:
- Refrigeration: Store any leftover Beef Taco Soup in an airtight container in the refrigerator. It will stay fresh for up to 3-4 days. Reheat thoroughly before serving.
- Freezing: This soup freezes well. Allow it to cool completely before transferring it to a freezer-safe container. It can be frozen for up to 3 months. When ready to eat, thaw overnight in the refrigerator and reheat on the stovetop or in the microwave until heated through.
- Avoid Overcooking: When reheating, do so gently to avoid overcooking the cream and cheese. Stir occasionally to ensure even heating.
