Ingredients

  • 1 pound lean ground beef (80/20)
  • 1 small yellow onion, finely diced
  • 1 ounce taco seasoning (1 packet)
  • 2 tablespoons chopped fresh cilantro (optional)
  • 6 large flour tortillas (12-inch, warmed)
  • 16 ounces refried beans (1 can, warmed)
  • 1½ cups shredded pepper jack cheese


Instructions

  1. In a large skillet over medium-high heat, cook the ground beef and diced onion until the meat is browned and the onions are soft. Drain any excess fat.
  2. Add the taco seasoning and prepare it according to the packet directions. Stir in cilantro if desired, then remove from heat.
  3. Lay out each flour tortilla and spread a layer of warm refried beans in the center.
  4. Add a generous spoonful of the seasoned beef mixture and top with shredded cheese.
  5. Roll the tortilla burrito-style, tucking in the ends as you go.
  6. For extra flavor and texture, toast the burritos in a non-stick skillet seam-side down for 2–3 minutes per side until golden and slightly crispy.

Notes

Serve your beef burritos hot and fresh for the best flavor. They pair perfectly with sides like Spanish rice, guacamole, salsa, or a simple salad. For extra crunch, try adding shredded lettuce or diced tomatoes on the side.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, wrap the burrito in a damp paper towel and microwave for about 1–2 minutes until heated through.
For longer storage, wrap burritos individually in foil or plastic wrap and freeze them for up to 2 months. To reheat from frozen, unwrap and bake in the oven at 375°F for 20–25 minutes, or microwave until hot.
