Ingredients

  • 2 cups cooked and shredded chicken
  • 4 ounces cream cheese, softened
  • ⅓ cup salsa
  • ½ teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • ¼ teaspoon salt
  • 1 tablespoon finely chopped green onion
  • 2 tablespoons finely chopped cilantro
  • 1 tablespoon lime juice
  • 1 cup shredded Colby Jack cheese
  • 810 small flour tortillas

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with foil, then lightly grease it with cooking spray. Set aside.
  2. In a mixing bowl, combine the softened cream cheese, salsa, cumin, chili powder, garlic powder, lime juice, and salt until well blended.
  3. Add the shredded chicken, Colby Jack cheese, green onion, and cilantro to the cream cheese mixture, stirring until thoroughly combined.
  4. Spoon about 3 tablespoons of the chicken mixture onto each flour tortilla, spreading it about 1 inch from the edge. Roll up the tortillas tightly and place them seam side down on the prepared baking sheet, leaving a little space between each taquito.
  5. Bake in the preheated oven for 15-20 minutes or until the tortillas are lightly golden and crispy.
