Ingredients
- 2 cups cooked and shredded chicken
- 4 ounces cream cheese, softened
- ⅓ cup salsa
- ½ teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- ¼ teaspoon salt
- 1 tablespoon finely chopped green onion
- 2 tablespoons finely chopped cilantro
- 1 tablespoon lime juice
- 1 cup shredded Colby Jack cheese
- 8–10 small flour tortillas
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with foil, then lightly grease it with cooking spray. Set aside.
- In a mixing bowl, combine the softened cream cheese, salsa, cumin, chili powder, garlic powder, lime juice, and salt until well blended.
- Add the shredded chicken, Colby Jack cheese, green onion, and cilantro to the cream cheese mixture, stirring until thoroughly combined.
- Spoon about 3 tablespoons of the chicken mixture onto each flour tortilla, spreading it about 1 inch from the edge. Roll up the tortillas tightly and place them seam side down on the prepared baking sheet, leaving a little space between each taquito.
- Bake in the preheated oven for 15-20 minutes or until the tortillas are lightly golden and crispy.
- Serve the Baked Cream Cheese Chicken Taquitos warm, accompanied by your favorite dipping sauce such as sour cream, ranch dressing, or salsa.
