Ingredients

  • 2 pounds ground beef
  • 4 slices of bacon
  • ½ white onion, diced
  • 5 cloves of garlic, minced
  • ½ cup diced pickles or pickle relish
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup cold water
  • 2 tsp cornstarch
  • 1 cup shredded cheese
  • 15 to 20 egg roll or wonton wrappers

Instructions

  1. Prepare the Bacon:
    • Fry the bacon in a large skillet until crispy.
    • Set the bacon aside and allow it to cool. Once cooled, chop it into small pieces.
  2. Cook the Beef Mixture:
    • In the same skillet, add the garlic and onion. Sauté until the onions are translucent.
    • Add the ground beef to the pan, breaking it up as it cooks.
    • Season with salt and pepper. Cook until the ground beef is no longer pink.
    • Remove from heat and drain any excess fat from the pan.
  3. Combine Ingredients:
    • Add the chopped bacon, pickles, and shredded cheese to the beef mixture. Stir well to combine.
  4. Prepare the Egg Roll Wrappers:
    • Mix the cornstarch and cold water together. Using a pastry brush, brush the edges of each egg roll wrapper with the cornstarch mixture.
    • Place approximately 3 tablespoons of the beef mixture onto one edge of the wrapper, about ½ inch from the sides.
    • Fold in the sides of the wrapper and then roll it up lengthwise, ensuring it is tightly sealed.
  5. Fry the Egg Rolls:
    • Heat oil in a skillet to about ½ inch deep. Once the oil is hot, carefully place a few egg rolls into the skillet.
    • Fry, turning occasionally, until all sides are golden brown.
    • Place the cooked egg rolls on paper towels or a cooling rack to drain excess oil.
