Apple Pie Quesadillas are a fun and easy dessert that combines the warm flavors of apple pie with a crispy tortilla shell. Perfect for a quick treat or a special dessert, these quesadillas are loaded with apple pie filling, drizzled with caramel, and topped with a cinnamon-sugar mixture for a deliciously sweet finish. They’re perfect for family gatherings, holiday treats, or an indulgent snack.


Ingredients

  • 8 small tortillas
  • 1/2 cup caramel sauce
  • 20 oz can apple pie filling
  • 1/4 cup sugar
  • 1/2 tablespoon cinnamon
  • 1/4 cup butter

Instructions

  1. In a small bowl, whisk together sugar and cinnamon for the topping.
  2. Pour the apple pie filling onto a cutting board and coarsely chop the apples with a large knife. Set aside.
  3. Melt 1/2 tablespoon of butter in a pan over medium heat.
  4. Add a tortilla to the pan for about a minute to crisp it up. Remove and set aside; this will be the top of your quesadilla.
  5. Melt another 1/2 tablespoon of butter in the pan. Place a second tortilla in the pan.
  6. Drizzle 1 tablespoon of caramel sauce over the tortilla.
  7. Spread 1 cup of chopped apple pie filling evenly over the caramel.
  8. Drizzle an additional tablespoon of caramel sauce on top.
  9. Place the crispy tortilla on top and let the quesadilla heat through, flipping if needed.
  10. Dust the top with the cinnamon-sugar mixture.
  11. Move to a cooling rack, allow to cool slightly, then cut into quarters. Serve with caramel sauce or vanilla ice cream.
  12. Repeat the process for remaining tortillas and filling.

Notes

  • Serve warm with vanilla ice cream or extra caramel sauce.
  • Store leftover quesadillas in an airtight container in the refrigerator for up to 3 days.
  • Reheat in a skillet for a few minutes to maintain crispiness.
